The Tofu Cookbook

Hey all,

If you don't know it already, The Tofu Cookbook is a good one. Especially the Tofu Pancakes, which is the grubbiest - most used - page in our book. They make good thick pancakes. Works best with the softer, chinese tofu as opposed to a harder one like Cauldron.

Sure ... voila!

The Tofu Cookbook, Louise Hagler

Tofu Pancakes

Serves 4—6
Makes eighteen 4” pancakes

Mix thoroughly together:
2 cups unbleached white flour
1/2 cup cornmeal
4 1/2 tsp baking powder
1 tsp salt
1/4 cup sugar

Gently stir in with only a few strokes:
3 cups milk or soy milk
2 tbsp oil

Batter will be lumpy.

Fold in gently:
1/2 lb Tofu, drained and well crumbled

Let batter sit while griddle heats. Fry on a lightly oiled griddle and serve.

... Yum yum - enjoy!

Per Pancake: Calories: 78. Protein: 3gm., Fat: 4 gm., Carbohydrates: 11gm.

wow seems like a huge recipe, are they like american pancakes, quite thick?
would also be nice with some blueberries or fruit folded through !
what else is in this tofu book??
