Sounds delicious.
One question - when you say baking soda do you mean baking powder or bicarbonate of soda? I'm guessing it's baking powder cos 1 tbsp of bicarbonate of soda is a LOT (I messed up a cake but using a tablespoon instead of a teaspoon of the stuff - eeeeeww!)
