Pumpkin protein cookies

These are one of my cutting staples. I bought some cans of puréed pumpkin from an American grocery store. These are quite high in protein and very moist and tasty.

Ingredients:

850g pumpkin purée
2 bananas
200g protein (I used myprotein vanilla soya protein)
40g egg replacer powder
50g oats
12 sachets truvia
2 tsp baking powder
1/2 tsp ground ginger
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp cloves
1.5 cups of water


Directions:
1. Mix together the pumpkin, bananas and water with a hand mixer or food processor.
2. Mix together all the dry ingredients a separate bowl
3. Mix the pumpkin together with the dry ingredients
4. Grease & flour a couple of trays
5. Cut into cookie shapes or just spoon the mix onto the trays
6. Bake at 210c for 12-15 minutes

Depending on how big you make them, this makes around 20-25 cookies.

Average macros per cookie: 10g protein, 7g carbs, 75 calories.

Nice! I've had 2 cans of pumpkin puree collecting dust for the past 12 months, I now have a use for them. How many grams are in a sachet of truvia? Teaspoon?

A few grams, so I think a teaspoon sounds right. My protein powder is quite sweet so I'm not sure if so much is needed, but if you used plain flavoured protein you'd definitely want to use them.

Have you tried using hemp protein powder with this recipe or any other baking recipe?

No, I've not tried it with hemp. I wanted something high in protein and not too high in calories, so hemp doesn't really fit that bill.

Don't see why it wouldn't work though, provided you can find some hemp protein that doesn't take like ass and won't overpower the other ingredients.

I made a batch of these yesterday. Are they meant to go crispy like cookies when they're baked? Mine are still squishy, not sure if I undercooked them?

Bumping an old thread cause I found a can of pumpkin puree in the reduced to clear.

I'm banana intolerant but want to makes these, anyone got suggestions of what I could use instead? pear?

I wonder if one could use apple sauce instead of pumpkin puree. I've never seen something like pumpkin puree in Germany. I've only seen canned pumpkin or was that pickled pumpkin? I guess that's something very different?

Canned pumpkin is exactly the same thing as pureed pumpkin. :)
