Potato salad

I've recently discovered that vegannaise is not at all like the vile, putrid non-vegan version, so I want to make some potato salad. Anyone have a good recipe?

The only salad worth eating! I don't have a recipe, but would say it needs to have gherkins in it.

Will put gherkins for sure. I'm thinking maybe some jalapeños and some other crunchy things, but it will have to wait. The first time I wanted to buy vegannaise it's sold out :( Will be sometime next week before it's back in stock.

The last few times some vegan products were on sale they sold out before I got to the store. Hopefully that means some more vegans shopping there. Now i just need to find out who they are.

if you wanna get all fancy, dry-fry pumpkin seeds then add balsamic vinegar at the end. chuck them in the potato salad right at the end. nice idea on the gherkins, not thought of that before.

I don't do fancy :P

I ended up going to a different store across town to get vegannaise, so made a batch on thursday. Didn't find a recipe I liked but was still tasty. I just put green bell peppers, garlic, celery, dill pickle, salt and pepper in with the potatoes and mixed in what looked like a good amount of vegannaise.

@baldy are gherkins the same in the uk as here in the states? I got the tiny little sweet pickles we call gherkins and they are completely inedible as far as I'm concerned. Dill pickle turned out okay though.

Things I will try next time:

Jalapeños
Mustard
Red potatoes
Different kind of pickle

No idea, I always get my gherkins from the polish shop. The UK ones are normally small and pretty sweet. The best ones are big and really vinegary, with dill and mustard seeds.

It seems in the uk all types of pickled cucumbers are called gherkins. Here in the states we only call the little disgustingly sweet ones gherkins, the rest are just pickles.

Coincidently, I also used polish pickles with dill and mustard seeds which worked pretty well. I don't think the sweet type would be very good in potato salad.

Why not try dressing it with a more vinaigrette type thing - i.e. strong olive oil, vinegar you like and some crushed garlic, chives etc. Maybe a bit of wholegrain mustard and salt to taste. I like it better to claggy mayo ones! Also the flavours go in to the potatoes really nicely if you add the dressing while the potatoes are still pretty warm...
