I have stayed in hostels in the USA, Canada & (mostly) Costa Rica & this is my favorite so far:

http://www.hostelcelica.com/I don't remember eating anything but bread there but the building itself is awesome and it's within Metelkova which is a sort of hippy-ish center of arts and club nights and sort weird and wonderful things. The hostel was a prison and Metelkova was an army barracks that they took over by sqautting

While that place seems much more exciting, I stayed at the old Fort Mason hostel in San Francisco:

I really liked the hostel we stayed at in Portland in 2007 - HI Hawthorne.
We got there too early to check in so just chilled in the lounge, and ended up helping make and eat a shared vegan breakfast, it was an amazing start to our stay.
It's very small which is a big bonus, as well as being just like a big old house. Had a living roof, and really enjoyed the location - Hawthorne and surrounds were very cool.

Oh, I wish we could have visited while you were here in Portland! The HI on Hawthorne does seem nice and is in a very good spot. Sadly I can't stay there as they don't permit locals to do so. Maybe I will look into volunteering with them again...

Just wanted to update folks: I've now stayed at the Ocean Island Hostel in Victoria, BC, Canada. It's a nice full-service hostel that offers vegan options on the menu of it's cafe and is in an excellent central location near all of Victoria's best vegan spots. Good stuff!

Slightly plugging since I do have a connection but
this hostel is in an amazing part of the Scottish Highlands, is owned by a charity (so profits support the charity) and they are on it with vegan food.
