Oatmeal protein power pudding

Silly name, but quite addicted to this. Especially recommend for those who are trying to gain bulk, but also an awesome dessert, breakfast or even for a main meal for those on the go! (All of the above for me.)

Essentially got this from www.chocolatecoveredkatie.com - a vegan dessert blog that I check out regularly, delish recipes that are usually pretty low-cal.


1 package silken tofu
Sweetener of choice, to taste
2 1/2 teaspoon (or more) vanilla extract
1 teaspoon (or more) ground cinnamon

2 cups non-dairy milk
4-5 servings already-cooked oatmeal (I just soak a bunch overnight in hot water, or for 1-2 hours minimum)
Up to 1 cup raisins
Sweetener to taste (I use stevia - 4-5 packets.)
Protein powder (I use true protein's gemma pea protein powder - banana, or chocolate peanut butter) - 1 to 2 (!) cups

Mix the tofu, sweetener, vanilla and cinnamon in a blender/food processor. Stir the milk and protein powder into the oatmeal (with raisins). Once combined, add the two - stir in the tofu mix. Ridiculous, eat hot or cold...

Optional - for extra calories, add peanut butter...

tasty...stumbled across chocolatecoveredkatie last weekend, there's some good stuff there...gonna try her pancakes when i get a lazy morning.

What do you think about blending everything but the raisins and then adding them at the end? Do the non-blended oats add a useful texture to the 'pudding'?

EDIT: I just found chocolatecoveredkatie a few days ago and she's awesome!

I've actually done this and it works, although it can be pretty thick - you can always thin it out, however.
