1-1/2 bell peppers, roughly chopped
1/2 medium yellow onion, sliced
2 heads baby bok choy, leaves seperated from stems

fry, in olive oil 1-1/2 tbsp ginger and 3 cloves garlic for about a min

add 1/2 block of semi-firm tofu, chopped along with 1 tbsp soy sauce cook for 2 more mins

add bok choy stems, peppers & onion and cook for 5 mins

tear up and throw in the leaves. add 1 tbsp toasted sesame oil and cook for one min, stirring

I had this with a baked potato covered with fresh chopped tomato and earth balance margarine!
