Beets!

I have some from my Boston Organics shipment. Never cooked with them before and could use some recipes. :)

peel the beets (your hand will look like you murdered people afterwards and beet juice will wreck white clothes)
cut em in 1/4- 1/2" rounds
throw them in a pot of boiling water for a coupla minutes.
drain
toss them with olive oil, sea salt and fresh black pepper
throw them on a hot grill until they carmelize a lil. flip them over for a minute of 2
enjoy


fyi -eating many beets at once will make your pee blood red. the first time i ate them i thought there was a serious malfunction in my innards

I've boiled beets in orange juice before and then when the liquid has reduced, serve them with orange zest on top. Makes a nice side dish.

You can grate them raw and toss w/same amount of parsley, add ginger juice or grated raw ginger (couple of tbs' worth), 1 tb oil of some kind (I use dha fortified flax) and a big handful of chopped walnuts.

The greens I usually chop up and cook w/kale and/or collards.

it really is a good way to finish large amounts of beets - i didnt write there but a beet salad is a good thing just add onion and lemon juice and eat!

You saved me. I have a large, large amount of beets and have nooo idea what to do with them all! D: They're about 2 wks old but should still be good.

great :D not my idea - theres a link to original page at the buttom of the post + im not sure about the amounts - so just taste it and if to beety add more tahini or more lemon juice its not accurate !

Ooh. I loves beets. (We call them Beetroots in Aus.)

Never made beet hommus before- I definitely will now though. Beets are awesome roasted, steamed or grated. I chucked some grated beets in with my kidney beans tonight, makes the colour a tad richer and they're full of goodness. I think I'll make Borscht later this week.

Don't forget to eat the leaves! The Romans used to only eat the leaves, they knew their shit, those Romans.

Forget cooking them. They're better raw in salad.

Slice them as thickly or thinly as you like, along with some carrots and radishes. Finely chop the beetroot and carrot leaves. Mix together and add olive oil and either orange or lime juice, or balsamic vinegar. Add chopped sultanas for a lovely sweetness.

Guaranteed top notch salad.
