Tonights dinner:
Lentil and coconut soup
1 onion finely sliced
2 chopped cloves of garlic
2 tsp red curry paste
2 tsp chopped fresh ginger
4 dl red lentils
12 dl water
2 vegetable stock cubes
3 dl coconut milk
4 fresh tomatoes, chopped
some lime juice
Gently fry the onion, garlic, ginger and curry paste in some vegetable oil. Add the lentils, water and stock cubes, and boil until the lentils are soft. Add the coconut milk and the tomatoes, let simmer for a couple of minutes. Add lime juice to taste.
