Please help me veganise this cake recipe!

It's just the egg that's a problem. Someone will have a perfect substitute. I thought about psyllium husk or something? That goes egg like with a bit of hot water.

These are 'paleo' too for any Zoneys out there...

1/4 cup sifted coconut flour
2 tbsps coconut oil
2 tbsps coconut milk
3 eggs
1/4 tsp vanilla
1/4 tsp baking powder
3 tbsps honey or maple syrup
1/3 cup raisins
1/3 cup walnuts
1/4 tsp salt (optional)

Blend together the eggs, coconut oil, coconut milk, vanilla, honey and salt. Whisk in cocnut flour and baking powder until smooth.
Add raisins and walnuts and pour batter into a baking tray/muffin cases.
Bake at 200C/400F/gas Mark 6 for 15 minutes.

Makes 6 muffins

Flax eggs would work for this but since there are three and the recipe yield is small, it might be a little flax-y. If you don't prefer that, I would try one tofu egg (1/4 cup pureed silken tofu) + 2 flax eggs (1 tbsp flaxmeal whisked with 3 tablespoons warm water per egg)

I think soya cream and an extra teaspoon of bakingpowder would work.

You can also change the soy cream to natural soy youghurt. It's nice...

a banana can make a nice substitute for egg, which for your muffins might work. will make a heavier cake though.
