Maybe not the most inspiring food but I quite like healthy stew type stuff. basically I start with something like lentils, cook them then throw in a selection of chopped veg in roughly the order they take to cook (ie. potatoes near the start, green veg nearer the end). I usually fry some onions n' stuff and add that too. Towards the end I add herbs/salt/pepper dash of tumeric (supposed to have anti cancer properties).
Serve with some nice bread. I've never really checked the nutritional content but I figure it can't be too bad.
Takes me about 40 mins to cook. I can make a large pan that'll last a couple of days.
