The post that xzebrasx made about local food got me thinking, so here is the challenge.
Can you post a delicious vegan recipe heavily featuring any combination of the following (they are British summer fruit and veg):

I've been thinking about this one for a few days now.

My first thought: Pizza

You could load a bunch of veggies on pizza, and it always turns out great.

Second thought: Spring Rolls

Obviously ya'll can't stuff every single mention into a roll, but you can pick a few veggies (cucumber, carrots, leaves?) and one fruit (plum). Vegan With A Vengeance features a roll recipe that has a fantastic dipping sauce. You could dip any combo in it, and it would probably taste wonderful. (Well...except Brussels Sprouts. I try and try, but I cannot stand them.)

Third: Fruit Salad

I know. Too easy. But it's the one salad that everyone eats around here. We cut up fruit (bananas are mandatory), sprinkle a tiny bit of sugar over it, let it sit for an hour, and serve.

I actually have an idea, but do you know of any nuts/seeds that are considered local? I can only think of sunflower seeds and hemp seeds off the top of my head. I'm also trying to think of sweetners that are local and I can only come up with maple syrup. I'm not sure how much maple syrup is produced in the UK, but here maple syrup is everywhere.
