So I bought some rice "cheese" the other day

It said it was just like mozzarella cheese...only problem is it doesn't melt!!! I adapted my Mom's mexican casserole recipe to be vegan (delicious btw) and it's supposed to have melted cheese on the top. This stuff just got hard and crunchy. Blah!

Please, any suggestion on other products that actually melt or maybe even a recipe? :D

I've had some issues with rice cheese as well, including the crunchiness when you want it to melt instead! I don't have any suggestions as of yet but when I find some good fake cheese I'll let you know :D

There are a lot of good vegan cheeses out there, but you have to buy different brands depending on what you want to do with it. I find that Sheese tastes almost identical to real cheese, but when you try to heat it, it becomes rock solid and inedible. I find that both Follow Your Heart cheese alternative and Tofutti make cheese that melts well. I've seen rice cheese in stores but have yet to try it; I've kind of given up on finding a vegan cheese that mimics real cheese, and heck, my cravings for cheese disappeared long ago!

wait... so they are just blocks of "cheese"? interesting... I haven't seen this brand around me. I'll have to keep an eye out from now on.

im not sure about vegan cheese from a health perspective..

but the best vegan cheeses are:

"cheezly" as already mentioned, which melts perfectly
and from what i have heard, http://www.teesecheese.com/ is great.

Thanks everyone! I can buy that teese cheese locally...I'll give it a try. :) I made mac and "cheese" last night with nutritional yeast. Used a different recipe...it was kinda gross. The first time I made it was much better. The kiddies love mac and cheese, so I really really need to come up with a good vegan recipe.

We have this issue as well, and I found a great alternative last night.

To make the sauce, use a can of tomato soup, 2 tbsp of veganaise, 1 tablespoon of veg oil, and two small squirts of regular yellow mustard, 1/2 tsp of salt. Add nutritional yeast to taste. No need to heat the sauce.

I like this mac and "cheese" a lot. As she says, it's not exactly like regular mac n cheese, but it is creamy and yummy!

super melting mozzarella cheezly melts great on top of pizzas and bakes. I also like it in mashed potato.

Teese moz is the best followed by FYH. I also like Daiya's Italian cheese.

Tips for melting vegan cheese:

1) For microwave, put saran wrap over the dish or have in covered plastic container.

2) For oven, cover with aluminium foil.
