Chipotle peperoni

As per emm7's request, here it is...

Adapted from "Seitan O'Greatness" on PPK.

Ingredients:
1.5 cups vital wheat gluten
1 tsp salt
2 tsp smoked paprika
1/4 tsp cinnamon
1/4 tsp cumin
2 tsp ground black pepper
1 tsp chipotle powder (or you can use chipotle paste if you have that)
1 tsp onion powder
2 tsp garlic powder

3/4 cups water
4 tbsp tomato paste (or you can use barbecue sauce and skip the tamari)
1 tbsp tamari
2 tbsp extra virgin olive oil
2 tbsp chipotle Tabasco

Preheat oven to 160C/325F

In a large mixing bowl mix dry ingredients. Mix the rest of the ingredients (liquid ingredients) in a smaller mixing bowl. Whisk well until mixed.

Add the liquid ingredients to the dry ingredients. Mix well, then knead for a minute or two.. it doesn't need long.

Form into a log (6-8" long), wrap tightly in foil, twisting ends. Bake for 90 minutes. When done baking, unwrap and leave out to cool all the way. Then wrap it foil or plastic and refrigerate. Slice to use as desired.

The entire log has:
1134 calories
32g fat
63g carbs
158g protein

Yup. Approved by meat-eaters. If you like spicy sausage then you'll like this. One thing I would add is to let it cool in the foil, rather than unwrapping it straight away, then chill overnight in the fridge, as it firms up more then.

My bf would love this as he likes fake meat/spicy things.

This is frustrating because I have all the ingredients minus the chipotle (I'm guessing it kind of makes the dish :P). I'll be sure to pick some up before I see him next so I can make it for him.
