I currently work long night shifts and here are some of my quick and easy recipes to make in a hurry.
1) Two slices of wholemeal toast with vegan butter, veggie mince mixed in with baked beans then some BBQ seasoning added.
2) Two slices of wholemeal toast with peanut butter and banana smooshed onto it.
3) Chilli - garlic, veggie mince, onions, peppers, tin of kidney beans. Fry for 5 mins and then add a can of chopped tomatoes. Add chilli powder to taste and leave to heat through for another five minutes.
4) Green lentil dahl - Mix 1 onion, green lentils, vegetable stock, can of chopped tomatoes and a tin of reduced fat coconut milk. I like to then add cumin, garam massala, chilli powder and tumeric, stick a lid on it and let it bubble for 15 mins.
Quick, easy and relatively nutritious!
