Just as a fun experiment I have been playing around with stuff on nutritiondata, trying to find the absolute 'healthiest' salad I could come up with. Now, I know healthy is a relative term, but I was trying to consider vitamins, minerals, and protein/carb/fat balance. What do you guys think? How could this be improved? And does anyone else have any super healthy recipes they want to share?
Super Salad

10 medium white mushrooms
1 red pepper
1 yellow pepper
1 can kidney beans
1tbsp olive oil

1tsp garlic powder
1tsp pepper

It comes out to 800 cals, 19f, 127c, 49p (20%-61%-19%).
Fiber is 39, sugars 18.
Omega3 to omega6 is 1:2.
