In Austria there is mountainbiker called Katharina Wirnitzer. She is vegan for 7 years und used to be semi-professional athlete in MTBing until 2004. She wasnt pro but semi-pro and quite on a high level.

and confirmed in a mail (copied below) to the vegan society austria that she is vegan. apart from that she is active in AR work in austria.

Seit ich 14 bin, mach ich ausdauersport (mountainbiking, laufen,
berglaufen).
Seit ich 16 bin lebe ich vegetarisch (mit der zeit immer konsequenter).
Seit 7 jahren (bin jetzt 32) lebe ich vegan.

Die wichtigsten und "jüngsten" rennen von mir und meinem mann (lebt zu ca.
80% vegan, 20 % vegetarisch) auf unserer hp.
2004 hatte ich vorest meine letzte wk-saison, da ich nun meine diss schreibe
über geanu dieses härteste mtb-rennen der welt, die adidas bike transalp
challenge. Bin aber privat natürlich immer noch voll aktiv unterwegs, aber
wettkampf ist halt eine andere liga!

Ich bin national und international als semiprofi unterwegs gewesen, bin des
öfteren am trepperl gestanden (auf der hp findet man nur die bedeutendsten
rennen, nicht vollständig) und wir konnten 2004 bei der alpenüberquerung das
profifeld halten(!), worauf wir sehr stolz sind, gemeint, wir waren nach dem
profifeld das 1. NICHT-profi-team im ziel.
Unter www.bikeextreme.org findest du (veraltet) den text für mein
diss-recruiting 2004.
Fahr grad auf kongressen zum thema radsport herum, komme grad aus birmingham
vom wichtigsten radsportkongress in diesem jahr, bin für den nächsten
kongress als speaker vorgemerkt.

Klingt alles recht toll, ist aber sehr mühsam, obwohls spass macht!

Leider kenne ich keine solche liste (außer den bekannten listen aus dem
netz, die du ja sicherlich auch hast);
Zum essverhalten kann ich dir aus meiner beobachtung von der
alpenüberquerung, dem rennen, das wir 2003 und 2004 gefahren sind,
berichten: der großteil des starterfeldes greift abends bei der pastaparty
zur tomatensauce und NICHT zur sauce bolognese mit faschiertem, de facto
mußte von den tomaten- + pilzsaucen die 4fache oder mehr menge gemacht
werden, und trotzdem ging die immer aus, wobei die fleischsauce immer zuviel
war.

Don't know if she has been mentioned, but there is a well known personal trainer in the US called Melody Schoenfeld. I have read about her in magazines and she has her own site.

what i find strange is that Tim VanOrden did not put any times on his site... this way it's imposible to tell if he is fast.
