Trekking for a week, food?

Hello!

My boyfriend and I are going trekking in the Jura for about a week in a bit, and we are getting all our stuff ready.
Problem is, what could I eat? I need vegan breakfast, lunch, dinner and snacks, and don't think i can manage on noodles and baked beans all that time... I have a few ideas but would appreciate yours too :)

Quick cook pasta with braised tofu and sun-dried tomatoes

Vegan jerky (prob need to get mail order)

Flapjacks with dried fruit and bananas in

Rice noodles boiled up with creamed coconut, spices and stir-fried peppers and spring onions to make a basic Thai green curry
