Can anybody do bodybuilding?

I have hypermobile (mega bendy) joints and I have low muscle tone... I find muscly women hot and I'd love to get toned up too....

It's my shoulders mostly... They occasionally pop and crunch. It hurts a bit and can be embarassing, as I have poor upper body strength for an adult woman.

Any advice on buffing up?

building the muscle to support your joints will help your joint issues for sure!

I have hypermobile joints too. Lifting weights can can also hurt. The difference comes from doing the exercises ALL of the time with the best form you possibly can. Hire a coach to show you the proper form and get a training buddy who will watch you to make sure you don't cut corners on proper form.

Building strength all around the shoulder is a good idea;

some of these -

some press ups and some chin-ups, taking it steady to start with and building up as you go should both strengthen your shoulders and help build a bit more muscle!
