Asparagus is nice (try white asparagus!), avocado of course, try some fruits, like thin sliced strawberry or kiwi, in the rolls or placed on top of each roll! Amazing contrast of sweet and savory...good, good, good...
I was at a vegan potluck recently (no one else there was vegan, but they all cater to
my taste, isn't that nice

?) and sushi was on the menu. Someone forgot that it was supposed to be vegan and was about to put some cream cheese in one roll...I interceded and suggested some avacado-jalapeno hummus instead, as they're just about the same texture. It was fairly divine.
(Also, put some finely chopped ginger in the tamari/wasabi, mmm, delectable!)
