Blinis - Best Buckwheat pancakes

Here's another, much simpler recipe,. made it in school yesterday, wow, so tasty!

For 40 3" cakes:

1 1/2 cups sifted unbleached white flour
1/2 cup buckwheat flour
1/2 tsp baking powder
1/2 tsp sea salt
1 tsp baking soda
2 tsp maple crystals - rapadura - sucanat (the healthier sugar)(maple syrup will also do, but mix it with the other wet ingr)
3 Tbs apple cider vinegar
3 cups soymilk
1 very ripe banana, mashed

1. In small bowl, combine flours, baking powder, salt, baking soda and sweetener. Set aside.
2. In large bowl, combine vinegar and soymilk. Let sit for 5-10 mins. Add banana.
3. Add dry to wet ingr. Beat batter only until blended, too much will develop gluten.
4. Bake in lightly oiled pan and serve. (we used some cheesecloth to rub pan with melted coconut oil)

You can substitute some or all of the white flour for buckwheat flour.

Enjoy with sweet or savory topping.
