Cuban oregano, Spanish thyme, Mexican thyme how to use it?

Not really sure how to use it though, all my googling has turned up recipes with meat. Anyone have any ideas?

Black beans, but not sure what else and can't find a recipe like the ones I remember from growing up in south florida.

The spanish thyme/indian borage is not in the recipe, but it will match. This sort of thyme is often used in Brazilian dishes.

The Ghee you can replace with sunflower oil, the curd/yogurt with coconut cream, and I would do without the shredded coconut.
(never tried that recipe though, just googled it now)

Oregano on rice (after cooking).
Thyme on beans or lentils (while cooking).

On beans? I have to try that. I like it on roasted potatoes, along with a bit of lemon juice.
