For the fans of Thai food...
1 small block tofu (200-300g) cut into small cubes
½ iceberg lettuce shredded
Juice of 1 lemon
1 garlic clove, crushed and chopped
1 tsp grated ginger root
1 tbsp soy sauce (or enough to balance the lemon)
handful of chopped coriander
½ tsp palm sugar or brown sugar
1 large shallot finely sliced
5–10 cherry tomatoes, quartered
1-2 bird's eye chillis, finely sliced
handful of roasted peanuts, crushed
Mix all the ingredients for the dressing.
Crush tomatoes in the dressing
Fry the cubed tofu until golden brown and crispy.
Add tofu to dressing when still warm
Stir the lettuce into the dressing/tofu mix
Serve garnished with crushed peanuts
