bread machine recipes / questions

i bought a bread machine and it came along with a small recipe book.

the problem with the book is they put eggs and milk everywhere ... suckers!!!

because the manual is a bit fussy about the actual proportion of ingredients and it says they have to be right if you want to make good bread, my questions are:

how do i replace the eggs? with a sobstitute or with an equal amount of water? and how much water does an egg equal to?

any other tip?
i'm focusing on some kind of stuff

To make bread all you need is water, flour and yeast. So I would start making it with just that, follow one of there recipes and add extra water to make up for the egg and milk.

Bread makers are also cool for making pizza dough.

I seem to remember replacing eggs with oil? But I haven't used one in years!

I recently got a bread machine as well and have been using this recipe

1 1/8 cup water
1 1/2 teaspoon salt
3 cups whole wheat flour
1 1/2 tablespoon sugar
1 tablespoon vital wheat gluten (optional but helps the bread rise more consistently)
2 teaspoons dry yeast

It makes dense, chewy bread, which I like. There are other recipes with soy milk and oil in them for lighter bread and supposedly more consistent results, but I haven't tried any of them yet.

i actually managed to do it nicely yesterday night. but i "cheated" by using a flour which had yeast in it :D

- 350gr flour (w/ yeast)
- 200ml water
- 1 tsp salt
- 2 tsp sugar
- 1 tbsp oil

i guess i could put some more water to increase the volume?
i'm focusing on some kind of stuff

Adding more water can make the dough rise more, but too much water will make it rise too much and collapse. If the bread turned out well, then the best way to make larger loaves is to increase the flour and water while keeping the same ratio. Most bread machines don't make very big loaves though, so it's probably not possible to make very much more per loaf without over filling the machine and making a mess.
