Super Fast lunchtime recipes

Here's one of my favorite superfast lunchtime meals - I'd love to hear yours.

Ingredients
Cous Cous
Pataks curry paste
Small tin of kidney beans or chick peas (optional)

Method -
Boil the kettle
In the bowl you will eat from pour some cous cous
Add hot water
Stir in a table spoon of Pataks
3 - 4 minutes later - eat.
Stir in your beans/chick peas if you like.

Sorry if it sounds a bit vague - i never measure out any quantities - just pour cous cous and add 'enough' water - you'll get a feel for it.

Sounds good.

My contribution;
You will need:
1 x box of Fry's nuggets
Tomato sauce.

Method:
Bake in oven at 250c for about 25 minutes.

Serve hot with tomato sauce.
Serves 1.

Baldys bulkers beans
--------------------------
1 packet of instant couscous, 1 (large) can of baked beans.

Heat beans, add dry couscous cover with boiling water. Leave to stand for couple of minutes. Stir and eat.

Bummer. I mistook preparation time and cooking time.

Quiona
Tinned tomatoes
Mixed beans (black beans, chick peas, whatever you like)
Vegetable stock

Boil the quinoa, heat the other ingredients in a pan. Stir through the quiona.

- Boil few dl of water
- Throw in packet of noodles (ready package with spices or plain)
- throw in a little tin of vegetables
- Add additional species (paprika, chile, cumin, black pepper, garlic powder), soya sauce and bbq sauce. What ever you have and fancy.
- Boil few minutes

Enjoy with few slices of wholemeal bread (I like mine with Colman's mustard)

Done in 5-10 minutes. Pay attention for not adding too much water to reduce the cooking/boiling time. If in real hurry add some cold water on your food to reduce the eating time.

EDIT: I forgot the most crucial ingredient of this delicious meal (hah). You should add few table spoons of dried soya to increase the nutritious value.

I ran out of money so concocted this from cupboard staples. Actually very tasty!!

tomato soup??

can of chopped tomatoes
bit of tomato puree
soya milk
tsp cornflour
herbs, spices (e.g. basil, paprika, chilli)
swirl of hemp oil

Heat chopped tomatoes gently, add spices and herb to taste. Mix soya milk and cornflour until smooth and then pour gradually into tomatoes. Add more milk if you want it thinner. Heat up and season plentifully with tonnes of black pepper. Swirl the oil.

When I need my lunch fast I take;
1 tortilla
1/2 avocado
1 dl kidneybeans
1/2 dl corn
1/2 tomato
2 tbs sweet chilie saus

Cucumber
Tomato
Avocado
Red pepper
Red onion
Mushrooms

All diced into cubes. Mix together with a can of chickpeas and some balsamic vinegar. Serve on a bed of spinach, rocket and watercress with a sprinkle of ground black pepper on top. Delicious!

mmm looking good - keep em coming.

cupboard staples and leftovers can sure make some interesting dishes...

Another favourite for me:
marmite, peanut butter and jam in a sandwich - quick to make and very nutritious.
Sometimes swap tahini for the pb.

Forgot to tell.

Not a recipe but to make a quick decent meals; boil lots of rice/pasta when you have time. Store in the fridge, at least in my experience stores well for 3-5 days, and when in hurry take a portion of this and mix it with sauces, beans, tofu, veggies what-ever-you-have in a sauce or frying pan, quickly ready to be eaten.

My basic recipe for a fast lunchmeal works like this:

I take any kind of vegetable, e.g. broccoli, pumpkin, sweet potatoes, etc.
Then I take some fast cooking grains e.g. quinoa, amaranth, etc. or soaked grains.
And I take any kind of legumes, e.g. red beans, black beans, chickpeas etc. (either self prepared in a pressure cooker or canned)

Then I take a steaming pot: below comes the water with the grains and in the colander on top comes the vegetable.

Then I let it steam for 15 - 20 min.. Afterwards the vegetables get mixed together with some cooking water. Then I mix everything together: the vegetables, the grains and the legumes.

For example, at present I love chickpeas and lotus seeds and I put them in any recipe...

Ahhh is making me so hungry at work!! Here´s one I just tried out yesterday (meal for one, but just increase for more people!!) -

Warm Leek Salad
1 Leek, chopped
1 small brown onion, diced
1- 2 cloves of garlic, finely chopped
1 tsp paprika
1 tsp cumin
1 - 2 Tblsp Gari (sushi ginger) (optional - i just added it in for flavour)
salt and pepper to flavour
+ Anything else you want to add - beans, nuts its a nice basic recipe you can add to

Gently fry onions and garlic until brown, add leeks, spices and gari and fry for 1 - 2 minute so that the leeks are still green and crunchy. Great with some rice if you have time, or even with some pita bread!

Yummy suggestions....was it someone on here who loved peanut butter sandwiches with pickles - I must say I tried that the other day and it was yum!

Anyways, a good one is the following (easy & yum, can make it with whatever you want to add in). Sorry no amounts just make to your liking.

Cabbage shredded very thinly, spread over a dinner plate - whack in the microwave and zap for 2-3 mins til softened slightly but still some crunch
Red capsicum (pepper) diced, sprinkle over cabbage
Tofu chunks (ready made from store or I often have made them fried up with some flavourings - soy sauce, spices etc ready in the fridge) spread over cabbage & capsicum
Nutritional yeast - either flakes sprinkled over the top or I often have a nutritional yeast sauce made up in the fridge (kinda a non-cheese "cheese sauce") drizzle over the top of everything
Once all compiled, zap in the microwave again briefly to heat all together.

Finally -Avocado sliced - put on the side or spread over the top.

Eat & enjoy - yum!
