This is what I made for my lunch today. It is delicious, quite delicious.
1/3 cup (dry) quinoa.
1 bunch of kale
1/2 smallish red onion
2 gloves garlic
1 medium carrot
1 medium parsley root
1/4 avocado
1/2 red pepper
1/4 pkg west coast smoked tofu
temari
lemon juice
liquid smoke
pumpkin seeds
I cooked the quinoa in soup stock.
for the kale I chopped up the onion and garlic. In wok over medium heat saute onions in a bit of oil in the wok until they are translucent then add garlic. Toss in chopped up kale and cook lightly. Add temari and lemon juice for flavour while cooking and add a couple drops of liquid smoke.
Set aside to cool (let quinoa cool a bit too when done)
Grate carrot and parsley root, chop up avocado, red pepper and tofu.
I layer quinoa on the bottom, then kale mixture (I used about 2/3 of it and saved the rest). Sprinkle grated carrot and parsley root on then tofu, avocado, red pepper and pumpkin seeds.
I add a touch of extra temari and lemon juice for dressing.
Super tasty wow! And looks all nice 'n colourful.
