As yet unnamed quinoa and avo summer dish

The only thing I've ever really figured out to do with quinoa. Its quick and simple to make, but can be a bit costly due to the quinoa (unless its not as expensive elsewhere as it is in SA). Serves 2.



- 1 cup quinoa
- 1 onion
- 1 yellow pepper
- 1 can chickpeas
- 1 ripe avocado
- 1t garlic
- 1t ginger
- herbal salt
- black pepper
- cayenne pepper
- paprika powder
- 1 or 2 cube(s) vegetable stock
- 1 ripe lemon or some lemon juice
- olive oil

Cook the quinoa as per instructions on the package. Add 1 or 2 cubes vegetable stock to it just before it is ready and stir in. Turn the heat off and leave to stand.

In a separate pan:

Fry diced onion in olive oil until translucent. Add about 1 teaspoon of garlic and 1 teaspoon of ginger and stir. Add sliced yellow pepper and fry for a few minutes on relatively high heat. Add paprika and cayenne pepper to taste (about a teaspoon of paprika and half that of cayenne I reckon). Add can of drained chickpeas. Add herbal salt and black pepper. Simmer for a few minutes. Take off the stove and leave to cool for a few minutes. Mix it in with the quinoa. Add a hefty amount of lemon juice and stir it all up. More salt and black pepper if so desired.

Dice an avocado and mix it in with the rest. Eat immediately before avo goes brown and yuk.
