smoked paprika stew, a bit like barbecue beans but better

Postby abbie » Sat Sep 08, 2007 8:35 pm

this smelt like a barbecue when it first went in the pan and i thought id burnt everything. i nearly cried. but it turned out mighty tasty!

a good spread of oil
two small onions
a carrot or two
2 cloves garlic

fry this lot nicely on a low to medium heat. add two heaped teaspoons of smoked paprika. Stir around for a bit. Then add:

400g tin chopped tomatoes
2 tbsp tomato puree
a bit less than a tbsp of molasses
a teaspoon brown rice syrup
a teaspoon of roasted carob powder
1/2 teaspoon cinammon
a few glugs of vegan worcester sauce
400g tin of pinto beans (or other)
2 tsp chilli powder
1 tsp dried oregano
100g dried red lentils
a pint and a half of water
sea salt

Put the lid on the pan. Crank up the heat. Simmer for half hour or so, stirring occasionally and topping up the water if too much has been absorbed. Then take off the heat, leave the lid on and let the flavours mingle and blend until you want to serve. It is best when it has cooled down a bit. Its so warming. I could eat this every day for the rest of my life. Ohhh its so lovely. I ate it with walnut bread.
