Coconut Yoghurt Recipe?

I have a yoghurt machine and tried to make my own coconut yoghurt, but my attempts failed so far. The yoghurt turns 'mouldy'... some sort of greyish fluff on top of the yoghurt

Does anyone have a tried and tested recipe for coconut yoghurt?

I'd just make a thick soya yoghurt and stir in coconut milk. I don't think you can make yoghurt from coconut milk.

I'm trying to replicate the Coyo Coconut yogurt... ingredients: coconut milk, tapioca starch, xylitol.

I replaced the xylitol with honey, as I read that the probiotic cultures grow better on some 'real' sugar, but it still didn't work... I am also wondering why it is getting mouldy

The Coyo coconut yoghurt is really nice btw...
(cost is 3 pounds for a tiny jar)

I don't understand why you would use honey instead of sugar...

...and then mention it on a vegan forum?

Also, what did you replace the starch with?

hiking fox, i am zero interested in dogmatic discussions, but something for you to think about:

"A certain number of bees are undeniably killed by honey production, but far more insects are killed, for example, in sugar production. And if we really cared about bugs we would never again eat anything either at home or in a restaurant that wasn’t strictly organically grown—after all, killing bugs is what pesticides do best. And organic production uses pesticides too (albeit “natural”). Researchers measure up to approximately 10,000 bugs per square foot of soil—that’s over 400 million per acre, 250 trillion per square mile. Even “veganically” grown produce involves the deaths of countless bugs in lost habitat, tilling, harvesting and transportation. We probably kill more bugs driving to the grocery store to get some honey-sweetened product than are killed in the product’s production."

You are certainly entitled to your views on honey, but this is a vegan forum, please follow the guidelines about posting.

As opposed to somebody who can't tolerate being advised that making yoghurt with coconut doesn't work? I was a chef for 15 years and was merely passing on my experience.

If you are going to slur everybody on this forum after a mere 30 posts, I suggest you hoppit and find somewhere a bit less vegan and a bit more passive aggressive, as you'd fit in better there.
