"Cheese"

Postby vincentxanthony » Thu Mar 29, 2012 1:34 am

SO I like putting various cheesy sauces on things. If I'm making a nice thick cream, I usually stick with cashews, and a little bit of nutritional yeast, but today I needed something to put on my couscous that I never tried before

So it was essentially cauliflower, nooch, a little bit of liquid aminos. Not super cheesy, but it's a nice saue with couscous and mixed vegetables. It'll keep me nice and satisfied at work tomorrow when I go on my lunch break.

Do you have any alternate 'cheese' sauces that you make for things? (not buy!)

lately I've been seeing recipes using sauerkraut. I haven't tried one yet though.

really good cheese sauce recipe...

soya milk
vegan stock cube
spoonfull of flour
1/2 pack of vegan cheese grated (or make your own soya cheese)
lemon juice

very easy, mix the flour with a spoon of milk and gradually add rest of milk, crumble in stock cube, add cheese, and bring to simmer stirring continuously... add teaspoon of lemon and taste, if its cheesey you're done, if not add tiny amounts of lemon to get cheese flavour.

this recipe fools non vegans and is perfect on lasagne and cauliflower cheese etc etc

The only thing worse than cheese sauce is "cheese" sauce. If baby Jesus was real he'd be crying at this thread right now, while his dad was killing kittens.

Meh, I really like nutritional yeast-based "cheese" sauces. Each to their own.

Starting the day with a scheese and onion toasty with a pot of strong coffee is one of lifes happy little luxuries. This is a fact NOT an opinion

I haven't made "cheese" for ages, I've been wanting something though.... I can't buy vegan cheese where I am, anyone have any decent cheese or cheese sauce recipes? I remember I used to make a block of cheese with cashews, nutritional yeast & agar agar powder (plus other stuff but it's been years since I made it and I've lost the recipe.) It didn't really taste like cheese to me, but I still loved in on toast and grilled!! Now if I want cheesiness I usually just add ground almonds or ground cashews to my meal and a little salt, ok so I know it's not quite cheese but it usually satisfies me. Ohh freshly toasted chopped almonds + sauteed garlic & onion + herbs + salt is great on pasta - I don't eat pasta much anymore, so I put it on vegies. still good! nutritional yeast would be good too. I make vegetable bakes layering vegetables with almond meal (instead of cheese) that is very tasty too.

Yes really scheese, but it tasted better before they removed the hydrogenated fat.

The only vegan cheese I've found that really tastes like it's non-vegan counterpart is parmesan. Plus it's the only one I can get in a supermarket which is often handy. That, paprika and a few tablespoons of blended oats in your standard nutritional yeast recipe makes it much better imo
