I have been reading a few very interesting articles about people doing this challenge for charity. https://www.livebelowtheline.com/uk
Of course none of them are vegan, but pretty damn close. Very tempted to try at least write up a vegan meal plan, if not give it a go for a few days.

I feel like I'm missing something because I don't think it's that hard if you have basic cooking skills and are used to a rather no frills diet. Though I'm not creative enough to do well at meals for one and a different dinner every day, I don't mind eating repetitively anyway and I find it generally works out cheaper.

Buying tesco value:

oats

bread
PB

2x pasta
2x tin tomato
Tin of beans
Onions
carrots
courgette

£4.55

With portion control you can make that last as 3 meals per day for a week and have money left for reduced to clear fruit or tea or herbs or instant noodle for snacks. Or with less portion control, 5 days with not much in extras. Not a happy diet but do-able, harder if you want a more varied diet though especially when cooking for one.
