Toasting Nuts

I read somewhere, maybe in Vegan For Life, that nuts are more nutritious when they're toasted. Is this all nuts or just some? I think it was referring to almonds in the piece I read. What about walnuts? Most nuts seem to be sold raw, perhaps because, right or wrong, many people see them as more nutritious that way.

If I were to roast a small jar of nuts and keep them in the refrigerator, would that cause they're nutrients to degrade? Usually I eat my nuts ground in a small blender and add them to avocados and nutri-yeast to make sort of a "cheese" paste for tacos or sandwiches. If I were to grind roasted nuts and keep them in the fridge, how long would they keep their nutrients? I'd want to do this for convenience, so I wouldn't have to spend as much time on food preparation.

I 'toast' seeds and nuts in a dry pan for a minute or two, no inconvenience at all; and the pan is 'clean' with a quick swipe of a tea towel...
