Winter: vegan bike saddle, grip options?

My bike is a cheap Marin that I bought back in 2007, and over the years I've replaced every component except for the frame, saddle, handlebars, and grips. For the past two years it has lived outdoor year-round, so the saddle and handlebar grips are falling apart. The handlebar grips are decomposing into a sticky, gooey mush and the seat cover has cracked and is mostly peeled off; the foam underneath is shot.

I'd really like a comfy saddle like this Serfas Rx, but methinks that leaving a squishy gel-filled seat outdoors all winter is asking for trouble.

I was thinking of replacing the grips with something a like these Ergon GP1 grips...

Any suggestions? thoughts? tips?

Obviously it isn't an option to keep it indoors.
But. Keep it indoors!

Since keeping it indoors isn't going to work, get a cover. It will pay for itself by keeping your components in better nick*. (*Only if you use it!)

Saddles are personal choice, you might have to work your way through a few.
My local bike buy and sell group on facebook usually has a steady stream of little used saddles that people are trying out and passing on.

My wife has those grips and likes them on her sit up and beg. If they feel right to you then go for it.
