Hello!

I thank the powers that be for getting me to this board.

I would like to know about seitan, and if it is ok for me to eat since I hardly eat wheat products.

I am planning to make it on my own. Recipes that I have seen call for wheat flour; the procedure of washing the dough removes the wheat, but is this procedure at all considered the seitan product as being 'wheat free' (as a result ot the washing).

I also understand that seitan can be made from tvp (texured vegetable protein). Is tvp a soy product?
What exactly is TVP?

Welcome to the board!

Seitan is made from wheat gluten. It's basically wheat flour but with all the carbohydrate taken out, what you're left with is the gluten which is about 95% protein.

If you want to make seitan, you can find wheat gluten at health food shops or online.

It's is fine to eat as long as you don't have something like ceoliacs disease. Also worth mentioning it's not a complete protein so try and not base your entire protein intake from it.

TVP is usually soya (vegetable) protein, so it's not used for seitan. But I have had dishes before that have mock-meat made from soya and wheat.

Seitan is regarded by many as the hardest part of wheat to digest, so if you have problems eating wheat, you'll probably have big problems with seitan.

You could always buy a small pack of pre-made stuff and see how you go?

Ok, thank you.

Saw online that you can use other flours, like brown rice flour/chick plea flour.

May have to adjust the moisture content, but it ought to work just fine.

I will post if successful.
