Wha? You're in Toronto and can't find seitan?? That's insane..

I recall a place in the Kensington market that sold it fresh in water, like tofu..

Have you called all your local health food stores?

I know, I only tried once and was not patient enough to do the whole process properly, with semi-nice result

Thing is that your case scares me, as I planed to move to Canada at some point, and that is not good news, especially for my skeptic wife

Sorry, I didnt mean to scare you , lol.
I used to live in Uruguay , South America many years ago and I used to buy Seitan from a very small health food store 5 mins. away from my house . I thought that it was gonna be easier to find it here in Canada .I have to go to 2 different supermarkets to do my weekly grocery shopping . I find that supermarkets dont have as many choices in brands as I would like .One store will carry more of the organic , cruelty free cosmetics , while the other store , will have more variety in food products , thats why it takes me a long time to do my groceries....
I wish I could have a health food store that will carry everything vegan so I dont have to worry in driving from one place to the other .
I live in Brampton which is like 30 to 40 mins from T.O .Apparently , they have bigger stores there(but those are the stores that I called and have no Seitan), with more variety ....I still have to go and check them out in person.Im willing to drive hours to get my tasty Seitan !!! :D

making seitan is not that hard ... i think there are different methods but some are dead easy. bob's red mill vital wheat gluten flour or whatever it's called gets good reviews.

after baking or steaming it, let it cool refirgerate, and then pan fry it.... this makes the texture really nice IMO. i prefer to put seasoning in the seitan dough as well, rather than count on it absorbing lots of flavour in a braising process.

do you have any vegan cookbooks?

I posted a link to a realy easy recipe for seitan sausage here

Well, mu hubby just got me a vegan cookbook with like 1000 recipes , but Seitan recipe is nowhere to be found.
All the Seitan recipes I saw had like 20 steps to follow and I think I got overwhelmed by them all. This recipe looks very easy to follow and I think that Im willing to give it a try .Can you tell me if nutritional yeast is the same as brewers yeast ? what about chik 'nish? I dont think Ive seen that ...
Im going to T.O. this weekend to a couple of health food stores and check myself instead of calling if they have it or not.If I dont find it then I will try this recipe ....WISH ME LUCK!!!! :P
Thanks very much for all your help !

Nutritional yeast and brewers yeast are different!

http://en.wikipedia.org/wiki/Nutritional_yeast

you would be able to get "nootch' at any health food store, I'm sure.

You should be able to find seitan from most health foods stores in Toronto. the Le Commensal restaurant makes quite a few.

Honestly, making seitan isn't that difficult, but it takes a bit to learn. I find the "dryer" you make the dough, the more dense it comes out. Also, if you make a big loaf, it will keep you good for a while.

If you just mix some gluten flour, spices, soy sauce and water, knead, then toss it is a cake pan with veggie broth/water/bay leaves for 45 minutes, you can have a panopoly of seitant for a few days.

Otherwise, health foods stores and Kensington (I'm in Ottawa so I don't know exact names of stores), but try this (to start at least):
